14、nareaccompaniedbytheemissionofheat,andtheexternalenvironmentalfactors(e.g.hotclimate,ventilation)canalsocausegraintemperaturechangesinbulkstorage.Asaresult,thetemperatureofthegraincanreachalevelatwhichseriouspermanentdeteriorationinthecommercial,technologicalandfoodpropertiesofthegrainwilltakeplace.

15、Itisthereforenecessarytodetectandmeasureanyoverheatingduringstorageandtotakeimmediateremedialmeasures,suchasventilationandcooling,sincelateremedialmeasureswill,inmostcases,havenoeffect.Inbulkstorage,suchdamageisoftenintheinitialstages,localizedandaffectsonlyasmallproportionofthegrainstored.However,s

16、uchdamage,althoughlocalizedintheinitialstages,canspreadtootherregionsofthestoredgrainifnotcheckedintime,easilyresultinginlarge-scalemildewcontaminationandpestinfestation.Theconsequencesofanyoverheating,evenifitislocalized,arealwaysserioussinceitispossiblethatabatchofthegrainwillhavetobemarketedatreducedpricesorcanevenbecom
